No Fry – Crispy Chicken


chicken2I have really pushed out into new territory with my cooking as I am more and more inspired to put home cooked meals on the table for my growing boys who will soon be strapping young men (they are 7 and 8).  They love mommy’s cooking, and I have them trying new things all the time now and thankfully they are open to it.

But along with making them try new things, I have mastered some basic essentials that one could easily buy in the frozen food section of the local grocer.  Admittedly, until recently I was pretty reliant on my frozen chicken products because they were easy and popular with the kiddos. (Although they seem to like ANYTHING dipped in Ranch.)  Be that as it may, as I realize now, the way I make Chicken Tender now – I can confidently say that I know how to pronounce all of the ingredients in this recipe!  I cannot say the same for frozen chicken tenders…

Here are your ingredients (and feel free to say them aloud if you need practice pronouncing them):

  • 2 lbs boneless Chicken Breast
  • 3 eggs
  • 1 cup flour
  • 3 Tbsp Water
  • Salt
  • Pepper
  • Panko Breadcrumbs
  • Butter Spray – Not cooking spray. (Optional to help brown your chicken tenders).

Notice there is no oil, nothing to fry in… these are easy bake chicken tenders!  So let’s get started!

Preheat oven to 350.

Cut away fat from your boneless chicken breast and cut them into 1 1/2″ – 2″ strips.  If the chicken breast is thick, tenderize lightly to thin out a bit.

Set up your breading station – flour in the first dish, egg mixed with 3 Tsbp water in the second, and Panko breadcrumbs in the third.  Season each station lightly with salt and pepper to ensure even seasoning throughout.  (You could also kick it up with your favorite spice mix like cajon or chipotle at this stage also.)


To add the “no-fry crispies” run your chicken through the breading process – dip first in flour coating both sides,  dip in the egg and then coat both sides with the Panko breadcrumbs.  Place in your baking pan (I prefer Pampered Chef stoneware).

Bake on 350 for 17 minutes.  Pull them out of the oven and spray with spray butter to help brown the tops for the remaining time.  Bake for an additional 18 minutes.

No Grease!  No Fuss! Voila!

You may alternately skip the spray butter and simply bake without touching them for 35 minutes straight.

They are delish, and I’ve made them many times – they come out juicy and perfectly cooked.
